Feb 7th, 2010 at 5:22am

Cabela's has a really good deal on the Kershaw Storm II knife online right now. More than Half Price: I ordered one today.  For that price--you can't go wrong. Enter NRAfreeship in the promo line to get free shipping.

Nice price for a Kershaw, Texas! You will likely be very happy with that knife. Only bad thing I can say about Kershaw is they sharpen at an odd angle.

I've got a book that recommends sharpening certain models of Kershaw (and some other brands of knives) at a 15-degree angle.  Most other US and European knives are done at a 20 or 25-degree angle.  I never understood why until I read an article in Cooks magazine.  Japanese kitchen steel is harder than US or European steel and things are sharpened at 15-degrees.  It cuts a lot easier.  On US or European steel, 15-degrees gets dull real quick, so sharpening at 20-25 degrees keeps things sharp longer.  To get a sharpener with a 15-degree angle might take a trip to your local oriental market.

Good for you Texas,

I purchased a Kershaw knife for Christmas, and got a good deal, but not that good.  Now I am jealous.

Here is mine, and I really have liked it.

Ok, so my Kershaw came today. It is scary sharp! (yes, I am a girl). I admit to being not too experienced with knives and while practicing opening and closing it "safely", I got a lesson in just how sharp that baby is. My thumb will heal (wasn't a bad nick), and I will not soon forget to be verwy kerful.  Shocked

TG:

Two thoughts.

Perhaps your new Kershaw knife came perfectly adjusted so that it opens very quickly, and I hope that's the case..  But if not, remember Kershaw sells a small tool w/the correct hex heads for adjustment of the Kershaw knife.  I had to use on one my Shallot because the blade would not "flick out" easily.  A slight adjustment and now it's perfect, as are my others.

My Buddy bought a new Kershaw knife last week, and we had to adjust the tension on his blade yesterday.. It's much better now.

This tools are inexpensive, and available on ebay.

...

Additionally, and maybe it's just me, but being an old "woose" who hates the sight of blood, especially my own, I ALWAYS close my knives using TWO hands.. And I look at what I'm doing.

I watch folks from time to time trying to close their folding knives with one finger, while talking to someone else at the same time...  IMO that's a cutting looking to happen.

I open my knives with one finger, and I don't need to look at the knife while I'm doing it, but I darn sure watch the blade when I'm closing it, and I use two hands.

Just personal opinion, no offense. Smiley

Best Wishes,

Jesse

No, that is excellent advice, and I am listening to you from now on and not the person who was telling me to close it with one hand.  Embarrassed

Texas, you should _eventually_ be able to close it with one hand. But like anything else, it will take time and effort to do so safely, just like reholstering without looking.
